Anthony Smith, a London-born, soccer-loving chef is in command of the kitchens at Eldorado Hotel & Spa in Santa Fe. As Executive Chef, Smith oversees the kitchen of the award-winning Old House restaurant; all food and beverage operations for 20,000-square-feet of meetings and function space, including Santa Fe's largest ballroom as well as room service for the 219-room hotel. Melding the freshest seasonal and regional ingredients, Chef Smith expertly creates dishes that please and satisfy the palate.
